Spiced Honey and Tomatoes Tossed with Guernsey Girl Cheese Cubes

This quick dish is satisfying and fresh. Make it for yourself as a snack or for supper as an app or a side.

Ingredients

Guernsey Girl Grilling Cheese - 400g

Cherry tomatoes – 1 pint

Rosewood Hot Honey – 2 tbsp

Chili flakes - 1 tsp (or Stoke Maple Chili Crisp)

Garlic – 4 cloves

Chopped mint - 1 tablespoon.

Smoked paprika - ½ tsp.

Crushed black pepper – ½ tsp.

Salt - to taste

Olive oil – 1 tbsp (we recommend Olive EVOO Garlic flavour)

Instructions:

  • Cut Guernsey Girl cheese into 1 -2-inch cubes.

  • Heat a pan up to medium heat, add the cheese cubes maybe 10 at a time and evenly spaced till lightly golden and crisp on all sides.

  • Let the cheese drain on a paper towel.

  • Meanwhile cut cherry tomatoes in halves, finely chop garlic and chop mint.

  • After the cheese is done, in the same pan add some olive oil and heat on medium heat.

  • Once the oil is hot add tomatoes and lightly sautéed, add Rosewood Hot Honey, garlic, chili flakes and smoked paprika and stir for like 20 secs.

  • Add the fried cheese cubes and quickly sauté.

  • Finish with chopped mint, freshly crushed black pepper and a pinch of salt.

  • Serve warm with some toasted bread – Fresh Fred’s Bread or Baked Crostini made in our Creamery Shop!
