OUR STORY

Wayne Philbrick, our Founding Partner, grew up in Niagara on a peach farm. As a lover of fresh, local produce he was fascinated with cheese he had purchased on a trip to Quebec. This planted the seed of his idea for Upper Canada Cheese Company and the artisan cheeses it would craft. When he returned, Wayne began to experiment at home with milk from the local Guernsey herd located on the Niagara Escarpment.

 WHERE WE ARE NOW

After arduous trials, two fine cheeses -Niagara Gold Cheese and Comfort Cream were perfected, and the Upper Canada Cheese Company was established in 2005. Today, Upper Canada Cheese Company proudly offers a wide selection of award-winning cheeses made with fresh Guernsey milk and wholesome goat milk from local farms right here in Ontario! The farm's eight generations of experience have allowed them to produce high-quality, reliable milk all year round.

GUERNSEY MILK

We are fortunate to be able to use fresh Guernsey milk from the family-owned Comfort Farms, located just up the escarpment. In fact, we’re the only creamery in all of Canada to produce our cheese with 100% Guernsey milk. These cows produce the highest concentration of A2 protein in their milk which provides many benefits. Guernsey cow milk is richer in butterfat and proteins compared to ‘ordinary milk’ and has several unique properties including high contents of Beta Carotene, more Omega 3 and Beta Casein A2. New research suggests the pure and delicious Guernsey milk we use to craft our A2 cheeses may be easier to digest and enjoy for some people who experience difficulty with dairy products.

Our Process

Each day, fresh, pure A2 Guernsey cows' milk and goats' milk is transformed into cheeses of unique taste and texture, revealing a subtle range of flavours influenced by the seasons, forage and feed. Then, our cheeses are ideally aged in our own cellars until they are ready for retail. This is the whole food, farm-to-table idea: a minimum of food processing intervention to produce the purest cheeses possible.

WHY US

We pride ourselves in making cheese from pure, wholesome milk, delivered fresh from the family-owned Comfort Farms, located in Saint Anns, Ontario. As artisan cheesemakers, we make cheese in small batches and are committed to the tradition of the cheesemaker’s art. Unlike large-scale cheese producers, we do not standardize our cheesemaking milk. Instead, we rely on seasonality and terroir. By doing so, the milk we use is transformed into cheese of unique taste and texture that reveals a subtle range of flavours influenced by the seasons, forage and feed. Each wheel of Upper Canada cheese is produced by hand, ensuring genuine care and quality, but also resulting in cheeses that are more complex in taste.
