Each day, fresh, pure Guernsey A2 cows' milk and goats' milk is transformed into cheeses of unique taste and texture, revealing a subtle range of flavours influenced by the seasons, forage and feed. Then, our cheeses are ideally aged in our own cellars until they are ready for retail. This is the whole food, farm-to-table idea: a minimum of food processing intervention to produce the purest cheeses possible. Our modern creamery was built in 2005 and our first cheeses, award-winning Niagara Gold and Comfort Cream, went to market in December 2005. We have since grown our selection of cheeses and most recently offer a Heritage Cheddar Cheese along with some popular goat cheeses. Located in the heart of the Niagara wine region in the village of Jordan Station, the creamery sits directly adjacent to a railway that, in the past, would have been used to transport fresh milk every day. We are surrounded by farm fields, orchards and vineyards, and the Comfort Farm, home to our Guernsey cows, is only 15 minutes away on land protected by Ontario's Greenbelt. Upper Canada's creamery has been built to the most rigorous food safety standards, is federally regulated, and is both state-of-the-art and small scale. Our mission is to create fine cheeses by hand and then to ensure that these premium cheeses are widely available.
