GG Pink Lady Cheese Cake

Guernsey Girl Pink Lady Cheese Cake
Serves 8
  1. 3/4 cup 35% cream
  2. 140-gr Guernsey girl cheese coarse chop
  3. ½ cup blueberries
  4. ½ cup raspberries
  5. ½ cup blackberries
  6. ½ t orange zest
  7. 1-cup sugar
  8. 1 cup white chocolate chips
  9. 3T lemon juice
  10. 150-gr cream cheese cut into small cubes
  11. 3 eggs

  1. In a double boiler place Guernsey Girl Cheese with 35% cream
  2. Allow cheese to slowly become soft and melt
  3. In a sauce pot on medium heat add blueberries, raspberries, blackberries, orange zest and sugar
  4. Allow berries to cook and release natural juices and sugar to melt
  5. Add white chocolate chips, lemon juice
  6. Cook till chocolate chips melt
  7. Remove from heat and cool
  8. In a food processor add cream and Guernsey girl mixture
  9. Place processor on high and blend till all cheese and cream become a creamy mixture.
  10. Place in berry mixture in processor and mix on high speed
  11. Mix till creamy and well incorporated
  12. Add cream cheese to processor and pulse to mix well
  13. Place processor on high speed to incorporate the cream cheese in to the mixture
  14. Remove lid from processor and clean down sides with a rubber spatula
  15. Replace lid and with food processor on high incorporate eggs one at a time
  16. Again clean down sides and mix well
  17. Remove from processor and place into spring form cheese cake pan or individual silicone hemisphere molds
  18. Bake at 300F for about 35-40 min or cheese cake mixture does not jiggle when shaken
  19. Allow to cool, place in refrigerator for minimum 4 hours
  20. Remove from pan or moulds and serve with sauce of choice
